Lately, for this purpose, I am using an automatic slow cooker, with temperature probe. Sorta, 'set it and forget it' deal.

temperature probe, switches to 'keep warm' mode, when temperature reaches 140°F
ready to slice homemade roast beef
today's breakfast sandwich, using home made roast beef
with cucumbers, tomatoes, dijon and mayo, on toasted multigrain bread
