Beef & Bell Peppers Sandwich

Today's breakfast sandwich was a slow cooked beef pot roast with sour pickles and flame roasted sweet red peppers, on toasted multigrain rye bread.

"Beef Eggs & Peas" sandwiches

Yesterday for lunch, I had made mashed potatoes with slow cooked beef pot roast and green peas. From leftovers of this feast, came my today's breakfast sandwich. Without mashed potatoes, but with eggs, to keep it all together.

Slow cooked beef pot roast

Living in Western Canada, I do most of shopping at Superstore and Costco. Ingredients of today's lunch also came from both of those places.

Usually, I buy a few this packages at Costco, when they are on sale.

Basmati rice, I've purchased from Superstore, also on sale.
