Grilled Vegetables & Chicken

Today for lunch grilled braised Brussels sprouts, asparagus, cauliflower, garlic, red and yellow sweet peppers, plus chicken thighs and fresh tomatoes.

Chicken Gyoza

Today for lunch made some Japanese pan-fried dumplings filled with chicken, napa cabbage, cabbage, garlic, green onion, ginger, plus some sesame oil.

Pasta Aglio Olio e Funghi

Tonight, while watching on TV Rick Steves eating and drinking wine in Tuscany, we developed an appetite for something Italian. And, what's more Italian than spaghettini with olive oil, garlic, tomatoes and mushrooms.

Shiitake, Veggies, Eggs & Cheese Omelette

This was a third day of me making lunch from the leftover Shiitake and veggie casserole. This time, I had added some eggs, along with shredded cheese blend of Mozzarella, Cheddar, Monterey Jack.

Shiitake, Veggies & Cheese Casserole

I as had promised, my yesterday's Shiitake and veggie casserole, with addition of shredded cheese blend of Mozzarella, Cheddar, Monterey Jack, became my today's lunch.

P.S. I use to drink vodka from glasses like this one, but now it full of very healthy pomegranate juice.

Shiitake & Veggies Casserole

Today for lunch made Shiitake mushrooms casserole with red onions, Brussels spouts, cauliflower, potatoes, tomatoes. Started with boiling potato cubes for 20 minutes and later adding sprouts and cauliflower for additional 5 minutes of braising.
