Shiitake & Veggies Casserole

Today for lunch made Shiitake mushrooms casserole with red onions, Brussels spouts, cauliflower, potatoes, tomatoes. Started with boiling potato cubes for 20 minutes and later adding sprouts and cauliflower for additional 5 minutes of braising.

and some slices of fresh tomatoes, when all cooking is almost done

P.S. Those leftovers, that with addition of some melted cheeses, will become my lunch, for tomorrow.
