One of most favorite dishes in post-soviet space is "Vinegret" -- a salad made from potatoes, beets, pickles, sauerkraut, onions and green peas, and usually dressed with sunflower oil. So, my today's sandwich is a homage to this famous communist culinary creation.
Here are the main ingredients lamb roast, red onions, cooked beets, sour pickles and cooked potatoes.
Starting assembly with meat and potatoes, mainly because I am a meat and potatoes kinda guy.
Then, go beets and pickles,
topped with red onions and sauerkraut.
Tomato, is not an authentic part of a "Vigegret", but rather added for sentimental reasons -- red is a colour of USSR flag (just kidding).
