"Colourful Chicken" sandwiches

Today's breakfast sandwich was very colourful. Deep purple colour of beet hummus, bright red of flame roasted sweet peppers, plus less saturated yellowish green of marinated tomatoes. All that on the subdued brownish background of toasted multigrain bread and off-white colour of extra lean smoked chicken.
