A relatively light, but very tasty Greek salad, as a today's lunch. Ingredients: tomatoes, cucumbers, black pitted olives, Feta cheese, onions, lemon juice and extra virgin olive oil.

Feta Salmon Sandwich
Most of the people, had tried some version of salmon with cream cheese, but my today's breakfast was less common, made from canned wild Sockeye salmon mashed with goat Feta cheese, with addition of capers and red onions.

"MatzoBell' sandwich
Today's Passover holiday breakfast sandwich was made with eggplant muhammara spread, flame roasted sweet bell peppers, Feta cheese and cucumber.

"Watermelon Feta" salad
Today, made a watermelon Feta salad with mint. It was my first taste of watermelon-mint combination, and I liked it very much.
The ingredients for this salad: watermelon, Feta cheese, red onion, pitted black Kalamata olives, mint leaves, balsamic vinegar, olive oil, salt and other seasonings.
To make it even more interesting, I've added a just a bit of 7 superfood blend.

"Tzatzikipeastan" sandwich
This breakfast came as solution to the problem, what do with yesterday's leftovers. I had some mashed green peas left and watermelon sitting in my fridge.
But, green peas are very plain by themselves, so I've mixed them with Tzatziki.
Used mashed green peas tzatziki mix, as a spread on Ciabatta buns and add thinly sliced and lightly salted watermelon, on top.
Then, placed some thinly sliced Feta cheese, to complete new "Tzatzikipeastan" sandwich
Here is a final result.
