Rainbow Tortellini

My today's lunch: Olivieri "7 Cheese Rainbow Tortellini", stuffed with Ricotta, Swiss, Parmesan, Mozzarella, Provolone, Asiago and Fontina. Plus, some Tzatziki and parsley.

"Bagel & Lox" sandwich

Relatively boring, but nevertheless very tasty breakfast today.
Toasted bagels, tzatziki, smoked salmon
and capers. Normally, I would have added some onions, but did have any in my fridge.

"Krasnaya Ikra" buterbrod

Was short on time this morning and decided to go simple Russian sandwich with red caviar.  Should stipulate, that used by me tzatziki is not very popular in Russia. They would probably use regular unsalted butter.

"Ikura & Eggs" sandwich

Origins of today's sandwich, consisting of chicken eggs and fish eggs, is very hard to determine. It can be Japanese or Russian. Ikura is a name for salmon caviar in both languages. Also, eggs are the big part of both cuisines. On the other hand, tzatziki and ciabatta, have Europeo–Mediterranean origins.
My egg flowers -- one day, I will make them look perfect.
But, for now, I will settle with perfect taste.
As often, foundation of the sandwich is toasted 9-grain ciabatta buns with tzatziki spread.

"BrieLox" sandwich

As a patriot, decided to buy Canadian alder-smoked wild Sockeye Salmon. So, today's breakfast is 100% Canuck. Only thing missing is a maple syrup. Oh well, there's always a next time.
If someone wondering, I bought it at local Costco for approximately $15.
As always, on slightly overtoasted 9-grain ciabatta bun, I had used tzatziki spread(yogurt with cucumber, sea salt and garlic), instead of traditional cream cheese.
To which added Brie cheese
and cucumber.

Potato latkes

Needed a break from matzah, so decided to make potato latkes.
Added some finely shredded cheese and melted it.
Topped it with tzatziki with cherry tomatoes and parsley.

Leftovers

Today, was another day of leftover food.
It started with roast beef matzo sandwich, topped with yesterday's salad.
And for lunch, I had mashed potatoes with tzatziki, topped with the same salad.

"Egg & Cheese" matzah sandwich

Here another version of passover holiday sandwich. The toilet seat cover shape was unintentional.
Started with a few eggs, sliced cherry tomatoes and sliced queen stuffed olives from Spain.
Then, topped it with President's Choice "Salad Topper", a finely shredded Parmesan, mild Cheddar and Swiss blend of cheeses.
Placed it on tzatziki covered matzah.

"MatzoLox" Passover sandwich

By this day of Passover, I'm pretty much ready to stab someone for a real sandwich, but we're not even halfway through yet.
Today, I made a "MatzoLox" sandwich, from salmon lox with Tzatziki, on matzah,
with red onions, capers and boiled eggs.

"Tzatzikimash"

I love mashed potatoes, but always feel uncomfortable adding a half pound of butter to it. So, my solution is to replace butter with yogurt based Tzatziki.
To this amount of mashed potatoes, I've added approximately 3 tablespoons pf dip.

"Brielox" sandwich

Today's sandwich is a combination of Brie cheese and salmon lox, with addition of roasted nori, cucumber and Tzatziki.
Here are all the main ingredients
First, slices of Brie cheese, then salmon lox,
followed by roasted seasoned seaweed and cucumber slices.
And finally, Tzatziki, which is traditionally made from yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic.

"Green" sandwich

It's not very interesting sandwich, mainly because I've forgot to add roasted seasoned seaweed, as it was originally planned. I believe, that this nori flavour would've added a aspect to the "Green" sandwich. well, maybe next time.
The ingredients for this sandwich, are Tzatziki-green pea spread, avocado, cucumber and of course a Ciabatta bun,
garnished, with a drop of Tzatziki and parsley

"Tzatzikipeastan" sandwich

This breakfast came as solution to the problem, what do with yesterday's leftovers. I had some mashed green peas left and watermelon sitting in my fridge.
But, green peas are very plain by themselves, so I've mixed them with Tzatziki.
Used mashed green peas tzatziki mix, as a spread on Ciabatta buns and add thinly sliced and lightly salted watermelon, on top.
Then, placed some thinly sliced Feta cheese, to complete new "Tzatzikipeastan" sandwich
