"GranaPadano Eggplant" sandwiches

Today's breakfast sandwich consisted of grilled eggplant, Grana Padano cheese melt and tomatoes, on toasted multigrain bread with homemade guacamole, made from avocado, garlic, salt and small amount of lemon juice.

"Chicken on Iceberg" sandwich

Not a real iceberg, but rather a classic Iceberg salad, a combination of iceberg lettuce, red cabbage and carrots. Chicken was in the form of an extra lean smoked chicken cold cuts. Even more, in my case, Iceberg was on the chicken, however it didn't sounded right, to be used as a name for this culinary creation.
As usual, my breakfast sandwich was based on 9-grain ciabatta bun, this time with eggplant spread.
A sunny-side up egg crowned the sandwich.

"PickledChick" sandwich

Actually, the chicken in my breakfast sandwich, was smoked and not pickled, But, there were sour pickles in it, plus tomatoes and eggplant muhammara spread on 9-grain ciabatta buns.

"Wicker Bacon" sandwich

Today's eclectic breakfast, was inspired by YouTube videos. Of course, it always looks better on somebody's elses videos or photos, but I had to give it a try.
Started preparation with braiding turkey bacon in the frying pan.
Unfortunately, my frying was too small for two separate wickerworks and I had to split the one I had.
Then, added tomatoes
sour pickles.
Toasted 9-grain ciabatta buns and eggplant with muhammara, served as a foundation of my sandwiches.
Here is a final result -- pretty and yummy.

"Chicken or Egg" sandwich

What came first the chicken or the egg? The answer to this age old question came to me during my breakfast preparation. The chicken came first and egg came later.
To be more precise, toasted 9-grain ciabatta came first followed by eggplant muhammara spread.
Then, came tomatoes and avocado and crowned by the egg on the top of everything.

The bread is back!

My first bread in 8 days, in the form of "Marble" rye bread breakfast sandwich, with eggplant muhammara spread, turkey "bacon", eggs and California sun-dried tomatoes.

Eating matza every day, makes my feel like a matzahist.
Today, I had roast beef matzah sandwich, with eggplant muhammara,
horseradish, cucumber

"Aubergine" sandwich

Today, I've made a grilled eggplant sandwich.
Started by grilling sliced eggplant in olive oil. After flip, add salt, herbs and spices. Topped with minced garlic.
At the end, added double slices of smoked cheddar and tomatoes.
Placed grilled eggplant on the toasted ciabatta bun, on bottom part of which spreaded creamy Caesar dressing.

"Bulgaria" sandwich

In former Soviet Union sweet red peppers, were called "Bulgarian", so that's where comes the name of my today's breakfast sandwich -- "Bulgaria".
No, I don't work for any grocery retailed and don't get any kickbacks from them. Just sharing information on some of the stuff, used in my cooking. Strub's in original cloudy brine -- are the best pickles widely available in Canada. But, don't look for them next to regular pickles. The really good pickles, made without vinegar and a lot of preservatives, can only found in refrigerated section. Following is very easy creation process of my "Bulgaria" sandwich.
