Once, in a kosher restaurant, I had asked a waiter: "Do you have matzoh balls"? "No," replied the waiter, "I always walk like this." Every time, when I make this soup, this recollection comes to my mind.
The soup is very basic, but in order to add some zest and solve the leftover problem, I've used some yesterday's quinoa salad in my soup.
To make it work, I had placed some salad in the soup bowls, just before filling it with Matzo ball soup.
