Shiitake, Veggies & Cheese Casserole

I as had promised, my yesterday's Shiitake and veggie casserole, with addition of shredded cheese blend of Mozzarella, Cheddar, Monterey Jack, became my today's lunch.

Shiitake & Veggies Casserole

Today for lunch made Shiitake mushrooms casserole with red onions, Brussels spouts, cauliflower, potatoes, tomatoes. Started with boiling potato cubes for 20 minutes and later adding sprouts and cauliflower for additional 5 minutes of braising.

Today's breakfast sandwich was made using yesterday's leftovers of canned wild Sockeye salmon mashed with goat Feta cheese and copped red onions, with addition of banana pepper and shredded cheese blend of Mozzarella, Cheddar, Monterey Jack cheeses.

Feta Salmon Sandwich

Most of the people, had tried some version of salmon with cream cheese, but my today's breakfast was less common, made from canned wild Sockeye salmon mashed with goat Feta cheese, with addition of capers and red onions.
