"Brinjal Garlic" sandwich

For the second day in a row, I was preparing purple food, while singing paraphrased version of Gogol Bordello's "Start eating purple eating purple, start eating purple, for me now..."
To make garlic bagels, I've spread a Caesar dressing on both sides of the cut in half bagel,
and toasted them in the oven for a few minutes.
Then, placed grilled Brinjal with Tex-Mex shredded cheese and tomatoes and covered it, with the top part of the bagel.
