The main ingredient for this creation was a blackcurrant, sugar, lemon juice and olive oil dressing, half of which was mixed with goat cheese and the other half served as a marinate for thinly sliced zucchini. Afterwards, the goat cheese spread went on toasted multigrain bread, following my marinated zucchini and garnished by lemon zest and raspberries.
