Rainbow Tortellini

My today's lunch: Olivieri "7 Cheese Rainbow Tortellini", stuffed with Ricotta, Swiss, Parmesan, Mozzarella, Provolone, Asiago and Fontina. Plus, some Tzatziki and parsley.

"Sockeye Egg" sandwich

The leftover, from my "Creamed Salmon" sandwich, canned sockeye salmon and cream cheese spread found its way onto my today's breakfast sandwich. Along with some sour pickles, eggs, Havarti cheese slices, baby kale, arugula and toasted 9-grain ciabatta buns, as a base.

"Kale Caesar" & Fried Chicken lunch

Today for lunch made grilled chicken drumsticks with "Kale Caesar" salad. I my taste buds opinion, Kale and Arugula taste better than Lettuce. Plus, I've substituted bread crumbs with corn Tortilla chips.

"Norilox" sandwich

Here another of my variations of traditional lox and bagel. The big difference is an addition of roasted seaweed(Nori) and that sour pickle in inside the sandwich, rather than on the side.

"Mangostraw 2" sandwich

This is a traditional "Mangostraw"(Mango-Strawberry) breakfast sandwich, but with some modifications.
For starters, I've used a different fruit spread -- peach, mango, orange.
Along with traditional toasted 9-grain ciabatta buns, mangos and strawberries.
I've also, used a creamy Havarti cheese this time, plus added some kale and arugula.

"Cheesy Zucchini" sandwich

Either I was very hungry or my cheesy zucchini sandwich was really amazing.
First, I've grilled seasoned zucchini in olive oil.
 
Then, added Tex-Mex shredded cheese blend, made from Mozzarella, Cheddar, Monterey Jack with Jalapeno peppers.
At the end, placed a few slices of fresh tomatoes on the melting cheese.
As usual, used toasted 9-grain ciabatta buns for my breakfast sandwich.

Beef Kebabs

Today's lunch: beef kebabs with tomatoes, sour pickles and jumbo stuffed olives.
Here is my colorful tomatoes, that I've purchased yesterday.
Only this left is to sprinkle some balsamic glaze, and voilà!

Look what I bought yesterday

Some of the more interesting items from my yesterday's shopping trip.
Love those colored tomatoes. The cost double, but look and taste amazing. I'll have them in my nest dish.
I am not a big fan of marshmallows, but could not resist buying those cute and colorful sweets. Now, I have to figure the way incorporating them into one of my sandwiches.

"Creamed Salmon" sandwich

A very simple breakfast sandwich recipe. Canned sockeye salmon, cream cheese and hot sauce, all mashed together and spread on toasted 9-grain ciabatta bun, and decorated by capers.

"Mac & Cheese" pasta lunch

If you're wondering, why I have rigatoni two days in a row, the explanation is very simple -- I've dropped too much pasta into the pot with boiling water. Once there, you can not take it back. So, I've boxed fully cooked paste and put it in the fridge.
Like yesterday, I've also used California sun-dried tomatoes with my pasta.
 
For the cheesiness, I've added Tex-Mex shredded cheese blend, made from Mozzarella, Cheddar, Monterey Jack with Jalapeno peppers.

"Chicken on Iceberg" sandwich

Not a real iceberg, but rather a classic Iceberg salad, a combination of iceberg lettuce, red cabbage and carrots. Chicken was in the form of an extra lean smoked chicken cold cuts. Even more, in my case, Iceberg was on the chicken, however it didn't sounded right, to be used as a name for this culinary creation.
As usual, my breakfast sandwich was based on 9-grain ciabatta bun, this time with eggplant spread.
A sunny-side up egg crowned the sandwich.
